Spinach has dark green leaves that are either flat and smooth or curly and crinkled. Both have crisp, fragrant leaves and a slightly bitter flavour. Spinach can be very gritty and must be rinsed thoroughly. Use raw in salad, combine with feta for spanakopita, or sauté in olive oil and garlic for a simple side dish.
