Shallots are native to Asia, specifically to the city of Ascalon in Palestine, and are believed to have been introduced to Europe from crusaders returning from the middle east in the 11th century. The bulbs are thinly sliced, fried, and then added as a layer of crunch in fried rice. Shallots are also commonly pickled to develop a sour flavor as it is believed in Indonesia that sour flavors will help stimulate appetites at the beginning of a meal. In addition to Asian recipes, Shallots are favored in French cooking and are used in traditional recipes including roasts, stews, and sauces such as marchant de vin, bordelaise, and perigeux.
